Recipe: Paleo Florentines

Ingredients:

  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1/4 cup goji berries
  • 1/4 cup sultanas
  • 1/4 cup thinly sliced almonds
  • 1/4 cup pistachios
  • 3/4 cup almond meal
  • Pinch of salt
  • Zest of one orange

Chocolate Drizzle:

  • 1/2 cup cacao melts
  • 3 T coconut oil
  • 2 teaspoons honey

Method:

  1. Pre heat oven to 170 degrees and line a baking tray with baking paper.
  2. Mix all Florentine ingredients together and put into baking tray and flatten out.
  3. Place into oven and bake for 20 minutes or till brown.
  4. Place cacao melts, honey and oil in small saucepan and place over low heat, stirring till melted and smooth.
  5. When Florentine slab has cooled , spread drizzle over and smooth out.
  6. Place in fridge and when cooled break or cut into pieces.
  7. Store in fridge.
