Recipe: Lamb Shanks and Date Tagine

Ingredients:

  • 6 lamb shanks
  • 2 onions chopped
  • 3 cloves garlic chopped
  • 1 T grated ginger
  • 1 T ground cumin
  • 2 tsp paprika
  • 2 cups chicken stock
  • 700 gm sweet potatoes cut into 2.5 cm pieces
  • 2 large parsnips thickly sliced
  • ¾ cup chopped dates
  • Chopped coriander to serve.

Method:

Preheat oven to 160 no fan.  Brown shanks in large casserole in 1T oil. Transfer to plate.  Add onion and cook 5 mins.  Add garlic, ginger, cumin and paprika.  Cook stirring 30 secs.  Add stock and return shanks to pan.  Cover and bring to simmer.  Put in oven and then cook in oven for an hour.  Remove, swap shanks around and add vegies and dates.  Cook another hour.  Serve with quinoa or mashed potatoes.  Sprinkle with coriander.
