Recipe: Chocolate Chia Cake

Gluten Free / Grain Free / Dairy Free / Refined Sugar Free

Ingredients:

  • 1 cup almond meal, sifted
  • 3/4 cup raw cacao powder, sifted
  • 1 1/4 cup coconut sugar, sifted
  • 125gms coconut oil (softened to butter consistency)
  • 5 eggs, room temperature
  • 1 cup water
  • 4 Tbsp chia seeds
  • 2 heaped tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp bi-carb soda
  • Good pinch of salt.

Method:

  1. Preheat oven to 180 degrees. Combine chia seeds In water and mix thoroughly. Allow to soak for about 15 mins, stirring regularly so it becomes a smooth gel with no clumps.
  2. In a medium sized mixing bowl sift in almond meal, raw cacao powder, coconut sugar, bi-card soda, cinnamon. Add salt and mix with a whisk ensuring there are no lumps.
  3. Add in softened coconut oil, eggs and soaked chia seeds (chia seeds should have formed a gel) and mix until combined with a wooden spoon
  4. Spoon into a round cake tin lined with baking paper. Bake for approx. 40 mins or until cake springs back to the touch. Check with skewer to make sure it comes out clean. Allow to cool for 10-20 mins before removing from tin. Cool on a wire rack.
