Ingredients
- 2 cups (250g) grated raw pumpkin
- 1/4 cup feta, crumbled
- 1/4 cup coconut flour, sifted (or substitute wholemeal flour)
- 1 tbs psyllium (optional)
- 1/2 cup fresh coriander, chopped
- 1 tsp chilli flakes
- 2 medium eggs
- salt & pepper, to taste
- 1 tbs coconut oil, for shallow frying
- 2 medium eggs, extra, to serve (poached or boiled)
Method
- To a large bowl, add grated pumpkin, feta, coconut flour, psyllium, coriander and chill flakes.
- In a separate bowl, whisk eggs and add to the above mixture. Combine well.
- Form medium-sized balls, shaping each well with your hands. Mixture should make around
6 fritters. - Heat coconut oil in a frypan, flatten the fritters and shallow fry until golden brown, about
1-2 minutes, flipping half way. - Repeat for additional fritters.
Serve fritters with a poached or boiled egg on top per serve.
NOTE: Using psyllium helps to bind in gluten free recipes. Grab some from your local health food store or the health food section of the supermarket.
