Ingredients:
Pudding:
- 1 cup dates
- 1 cup almonds
- ½ cup pecans
- ½ cup sultanas
- ¼ dried cranberries
- 1 TBSP orange zest
- 1 TBSP lemon zest
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1 tsp nutmeg
- currants or cranberries for decorating
Frosting:
- ½ cup raw cashews soaked for at least 3 hours or overnight
- 2 TBSP maple syrup
- 2 TBSP soy milk or almond milk
- 1 TBSP lemon juice
Method:
- For the pudding: add the nuts, dried fruit, orange and lemon zest as well as the cinnamon, ginger and nutmeg to the food processor and blend for a few minutes until the mixture becomes sticky. Process the nuts first if you are wanting a finer texture. Roll into even sized balls and flatten the tops slightly.
- For the frosting: add the cashews, maple syrup, milk, lemon juice coconut oil and vanilla to a blender and blend until smooth. Make sure there are no lumpy bits from the cashews. You can pop the frosting in the Fridge to help it firm a little before using it or use straight away so it could fall down the sides of the balls.
- Decorate with three fresh currants or cranberries if you can find them!
- Store in the fridge or freezer in a container with a lid. Enjoy!
