Recipe: Hot Cross Chocolate Date Muffins

Ingredients:

• 1/4 cup Changing Habits Cacao Melts, chopped
• 1/2 cup Changing Habits Rapadura Sugar
• 3 Tbsp orange juice (fresh)
• zest of 1 orange
• 230g coconut oil
•  1 1/2 cups Changing Habits Dates, roughly chopped
•  100g buckwheat flour
•  150g almond meal
•  1 1/2 tsp baking powder
•  1 tbsp apple cider vinegar
•  3 eggs
•  2 tsp of 5 spice powder
•  1 tsp Changing Habits Ceylon Cinnamon
•  1/4 tsp Changing Habits Seaweed Salt
•  Cross Ingredients: 2 Tbsp buckwheat flour + 2 Tbsp tapioca flour + 3.5 Tbsp water + optional sweetener to taste

INSTRUCTIONS:

1. Preheat the oven to 180C. Grease and line a muffin tray.
2. Add all the muffin ingredients into a bowl and combine everything evenly.
3. Taste the mixture and adjust the sweetness, spices or orange if needed.
4. Scoop the muffin mixture into the lined muffin tin evenly.
5. Place them in the oven and bake for 22 minutes (In a fan-forced oven). Please note that it may need a little longer if you have chosen to make larger muffins.
6. Meanwhile, mix the cross ingredients together in a small bowl to create a thick paste.
7. After 22 minutes (or once your muffins are golden brown), take the muffins out of the oven and use a knife or a spoon to create a cross on the tops of each muffin with the thick white paste.
8. Place them back in the oven. The cross only takes a short amount of time to bake so keep an eye on it. We cooked ours for 3 minutes.
9. When they’re ready, remove from the oven and enjoy warm.
