Ingredients:
125 grams melted butter
3/4 cup coconut palm sugar
3 over ripe bananas
1/2 cup raw cacao
1 cup toasted shredded coconut
1 egg
1 cup milk
2 cups sifted GF flour (almond meal or buckwheat flour)
Method:
1. Preheat oven to 220 degrees celcius
2. Mash the bananas
3. Mix butter, cacao, coconut, mashed bananas and eggs into bowl
4. Sift flour into and fold gently into mixture
5. Place muffin papers in baking tray and evenly distribute mixture into muffin papers
6. Bake at 220 degrees for 12-15mins or until skewer comes out clean
7. Place on cooling rack and allow time to cool down
