So yummy with corn chips watching the footy finals!
INGREDIENTS
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 ripe avocados, halved, stone removed, peeled
- 1/2 red onion finely chopped
- 1 Garlic clove, finely chopped
- 1 tomato chopped into cubes, Cut out insides and de seeded
- 1 red birdseye chilli, seeds removed, finely chopped
- 1/4 cup finely chopped fresh coriander
- 2 tablespoons of lime juice
- Corn chips, to serve
METHOD
- Toast the cumin and ground coriander in a frying pan over medium heat for 1 minute or until aromatic. Transfer to a bowl.
- Add the avocado and mash until smooth.
- Add the garlic, onion, chilli, chopped tomato, fresh coriander and lime juice. Stir to combine. Grab a corn chip and taste to ensure its delicious.
- Season with salt and pepper and get another chip and check the seasoning and make sure its even more delicious.
- Serve with corn chips. ENJOY.
