Jackie’s Recipe of the Month: Tasty Meatloaf

Tasty Meatloaf

Ingredients

Combine with hands:

  • 1 kg beef mince
  • 2 eggs
  • 1 large, finely chopped or grated onion
  • 2 cloves crushed garlic
  • ½ cup of chopped parley
  • Salt and pepper
  • 1 teaspoon paprika

Mix together:

  • 3 tablespoons of soy sauce
  • 2 tablespoons of tomato paste
  • 1 tablespoon of honey
  • 1 teaspoon of seeded mustard

 

Directions

  • Place large sheet of baking paper bench and spread meat mixture out to form a large rectangle.
  • Finely chop large bag of spinach and sauté in oil till wilted. Spread over meat mixture.
  • Slice 8 button mushrooms and sauté in oil, adding salt, and tossing regularly while cooking till liquid is absorbed. Spread over spinach.
  • Grate 200 grams of tasty cheese and spread over mushrooms.
  • Roll, using paper, pressing as you go to form a roll. Close off ends, remove paper and transfer to large sheet of foil.
  • Brush sauce mix over meatloaf, retaining leftover for later.
  • Wrap up and place in baking dish. Cook 60-80 minutes, depending on your oven, at 180 degrees. When cooked remove from oven, unwrap, folding foil around loaf. Spread remaining sauce over loaf and return to oven for 10 minutes at 220 degrees.
  • 8. While cooking, make salad of your choice to serve on side.
