While travelling in Spain and Italy we have been trying Burrata salads along the way. Burrata is a new cheese experience for me and you can now find quality Burrata from good delis in Australia. It is a circular-shaped Italian cheese made from cow’s milk and at first glance, it looks like fresh mozzarella cheese balls. But what’s inside makes it truly special. It has a soft outer layer of fresh mozzarella cheese with a creamy center. If you slice into it with a knife, the gooey center pours out and the blends of contrasting textures with the acidity of tomatoes and the vinegar is dreamy. A perfect salad for Spring.
INGREDIENTS:
- 1 Burrata
- Several large tomatoes – Use some different varieties if available
- Lebanese cucumber
- Handful of mixed greens
- Roughly chopped fresh basil leaves
- Optional: Barbecued meat of your choice
FOR DRESSING:
- 2 tbsp of extra virgin olive oil
- 2 tbsp of red wine vinegar or balsamic depending on your taste
METHOD:
- Place mixed greens on a large platter
- Slice several large ripe tomatoes and place on the lettuce.
- Add slices of Lebanese cucumber, some thinly sliced red onion.
- Tear burrata into pieces and place around the salad
- Sprinkle chopped basil all over
- Mix the dressing ingredients in a jar:
- Pour over the salad and serve with some barbecued meat of your choice.
