Apricot, Date and Coconut Bliss Balls

Everybody loves a bliss ball and these zesty babies will be an instant hit!

They are super quick & easy! Only a small amount of sweetener is needed but they are full of flavour. They are so deliciously fresh, light and so moorish… a decadent but guilt-free treat!

The perfect snack to have waiting in the fridge for when you get a little peckish!

INGREDIENTS

  • ¾ cup dried apricots, chopped
  • ¼ cup sun-dried dates, chopped
  • ½ cup almond meal
  • 2 cup desiccated coconut
  • 1 tbs macadamia oil (you can also use coconut oil)
  • 1 tbs honey
  • 1 tsp lemon zest
  • ½ tsp vanilla powder or essence
  • ¼ tsp salt

METHOD

  1. Place dried apricots, dates, almond meal and 1 cup of desiccated coconut in a food processor and mix until well combined.
  2. Add in macadamia oil, honey, lemon zest, vanilla and salt and process until mixture comes together.
  3. Roll mixture into balls and toss in the remaining cup of desiccated coconut.
  4. These beauties are best keep in the fridge and will last about a week if you hide them well!
